Apricot stuffing

3 oz Dried Apricots (preferably unsulphured)
3 oz Fresh white breadcrumbs
1/2 t Mixed spice
1/4 t Salt
1/4 t Pepper
1 T Lemon Juice
1 oz Butter Melted
3 Eggs, Beaten

Chop the apricots and mix with the rest of the ingredients. Only brief cooking is needed. Sunflower and/or sesame seeds can be added for interest.
