Balti vegetable

Back to the Menu...Baltis are normally cooked in a "wok". In fact the wok is called a Karai, and is a very good tool for the job. Food can be deep fried in small volumes of oil, and there is normally plenty of room for vigorous stirring. If you are buying balti pans, make sure they are big enough to cook in.

This kind of curry is traditionally served with Nan rather than rice.

2T Sunflower/soya oil
1 Garlic clove
50g onion, chopped
1T masala paste
175g cooked vegetable of your choice.

Serves one person.

My favourite vegatables to use are: cauliflower, mushroom, spinach or potato. An interesting one is to use kohl rabi. Of course, you can also use dal.

Stir-fry the garlic for 15 seconds, add the onion and fry for 1 minute and then the paste. Stir-fry it for 2 minutes more. Add the vegetables and heat through.
