Date and Walnut Cake

Deliciously moist fruit and nut cake.

115 g 4 oz Butter or margarine
115 g 4 oz Caster sugar
2 Eggs, beaten
1 Banana
1t Bicarbonate of soda
2t Vanilla essence
225 g 8 oz Self-raising flour
115 g 4 oz Broken walnuts
200 g Dates, finely chopped

Pre-heat an oven to 180C, 350F, gas 4. Cream the butter and sugar together in a mixing bowl, the gradually add the eggs, beating between each addition.

Mash the banana and add that. Add the bicarbonate, vanilla essence, nuts and dates and mix well. If the mixture is too dry, add a little milk.

Finally, add the flour to the mixture, stirring constantly. Grease and flour a cake tin and add the mixture. Bake for approximately 1 hour 15 minutes. Use a lower temperature and a longer time if you are using a loaf tin. Let the cake cool before serving.
