Glamorgan sausages

Easy and simple veggie sausages, based on a traditional recipe. Great for barbies. Back to the Menu...

1 oz 25g Butter
3 Leeks, small, washed and finely chopped
1lb 450g Potatoes, cooked and mashed
4oz 125g Caerphilly cheese, grated
1T 15ml Chopped fresh parsley
pinch each Dried fresh herbs, mustard powder
1 Egg, separated
2T 30ml Plain flour
3T 45ml White breadcrumbs, toasted

Heat butter in a large pan, add chopped leeks and fry until just softened. In a bowl mix together the potatoes, cheese, herbs and mustard powder. Add the leeks and season well. Add the egg yolk to bind the mixture together and divide the mixture into eight. Shape each into a sausage. Roll the sausages in flour egg white and then toasted breadcrumbs. To cook, fry the sausages for 5-10 minutes until golden brown on all sides. Can be served hot or cold.
