Back to the Menu...Kazakstan Loaf

This is a recipe from Don Job, a baker in Falmouth. The quantities are quoted according to his needs, so scale it down, unless you want to feed an army.

 

2.7 Kg Organic Whole-Wheat Flour
0.45 Kg Millet Seed, Rye Flour, Sunflower Seed, Kibbled Wheat, Sesame Seed, Maw Seed
0.05 Kg Salt
0.09 Kg Yeast
2.5kg Water
1.2 Kg Hazelnuts, Ground, Flaked, Nibbed, Whole
1.2 Kg Almonds, Flaked
1.2 Kg Walnuts Nibbed
1.2 Kg Coconut, Nibbed
1.2 Kg Peanut, Nibbed

Make the bread as normal and then roll in the seed mix. This bread doesn't rise much!

Bake for 30-35 minutes at 230 C.
