This recipe makes a wonderful, aromic and heavy bread which is ideal served with butter, good cheese and pickled onions. Best served hot, and can be used as snack, starter or main course. This is a recipe for a 1.5lb bread machine.
100g | Cheese |
2 | Garlic cloves, crushed (use more if you want!) |
350g | Strong flour |
2t | English mustard powder |
290g | Potatoes, grated (about 3 decent ones, peeled) |
2 | Eggs, beaten |
85g | Milk |
1.5t | Yeast |
1t | Salt |
Coarsely grate the potatoes and cheese. Put them into the bread machine pan and add the flour. Add the rest of the ingredients, reserving some of the milk. Using a basic rapid programme (3), start the bread machine, adding the rest of the milk as necessary during kneading to make a sticky dough. You coud sprinkle more cheese on top at the end of proving.
If not using a bread machine, form into a round loaf and place on a greased baking tray. Mark into segments by cutting quite deeply with a sharp knife. Bake for around 30 mins at 220oC, 425oF, gas mark 7, until it is golden brown on top.
