Put live squat lobsters in cold heavily salted water. Bring to the boil and then remove from the heat. Shell them like prawns. Shell the scallops too.
Fry the garlic and onion in butter and olive oil. Add 1T flour and stir. Add creme fraisch and wine, then the scallops. Cook for 5 minutes.
Warm 4 tablespoons of whiskey add to squatties, flambe pour into the mixture stir and serve over a bed of rice.
