Balti Garam Masala

60g Coriander seeds
40g White cumin seeds
25g Aniseed
25g Cassia bark
25g Green Cardamom seeds
15g Cloves
5g Dried Mint leaves
2g Dried Rose petals (optional)
1/4g Saffron(optional)

Roast under low or medium grill (they should steam). Stop grilling when they stop smelling! Grind them all up and store for a couple of months.
